Does anyone have experience replacing kitchen knife handles? I bought a few inexpensive knives today and have been thinking about restoring knives for my next project(s). The handles can be salvaged with some work, but I think replacing the handles will be better long term. Any comments?

Each of the knife blocks gets a quarter circle bloodwood inlay on each side where the ends of the side pieces come together. On the prototype I made a jig to use a 2” forstner bit to cut an 1/8” deep recess for the inlay but the client wanted the inlay bigger so I bought a 3” forstner bit...
One of the biggest challenges of making 25 of anything is being consistent with all of the measurements and finding ways to do glue-ups efficiently. The sides of the blocks all have to be the same size on the top dimension so when the fronts are attached everything matches up. I found out...
