Latest project: XL Pizza Peel

Nothing really special about this but it was a lot more fun than most other stuff I've been doing lately. The main reason is that I had help from a friend who was thoroughly impressed, overwhelmed, and awed by the process and tools involved. Here are some pics and a brief summary:

If you don't know what a pizza peel is, it is just a flat board that is used to move pizzas in and out of an oven. My friends own a restaurant and they have pizza on the menu. One of the pizzas they make is about 22'' in diameter and there are no commercial pizza peels big enough to accommodate that size. So my friend Richard asked if I could make one, and of course I had to accept the challenge ;-)

Richard really wanted to see how it could be done so he came to my house and we went out to the garage shop to figure it out. I had some rough 12/4 poplar that I thought would be perfect. He was amazed at how we milled it down to 3/8'' planks.



We cut all but one plank to length (need a long one for the handle) and edge glued them together. The next night we cleaned up the dried glue and cut the shape with a jig saw.



We had to profile the edges with two different router bits (a chamfer bit because I didn't have a roundover bit small enough to work on 3/8'' thick stock, and a panel raising bit because that was all I had to put a bevel on the front edge).

After about an hour of sanding (from 80 up through 320), here is what we had:



The best part of the whole project was how much Richard was impressed and awed the whole time. He really could not believe that we started with rough wood and made one of the best pizza peels he's seen. It was truly very satisfying to be able to make something that will be put to good use and solve so many problems for my friends' pizza making :drunken_s

Thanks for looking! If anyone wants some great pizza, my friends' place is called La Strada and is in Waxhaw. Tell them I sent you and I bet he shows you the pizza peel :lol:

That looks awesome! I think we tend to forget that what we consider "normal" probably blows people out of the water. Like milling rough stock into planks. Or rounding over an edge. Great job on what looked like an extremely fun project.

Now we need foto's of the peel in action!

To top the cake, I think you should take that over to John K in Waxhaw and get it laser engraved with something cool ...

That is an awesome story, and a project that I would like to make one day. My wife and I enjoy homemade pizza and we have one peel, and generally make two pizzas. We like to roll out the dough, and top it one the peel, then use it to slide the pizza off onto the pizza stone in the oven.

That was my very first thought too.8-O

I have used way to many peels in my life, so I can tell you that one looks great! How did you draw/route/scribe the circle in the peel?

Hi Joe,
What a nice story. I had a similar experience with my son. About 2-3 years ago he was working in a local pizza shop and asked if I could make a 24" peel. We built it together which was his first time in the shop helping out. Very good memories of that day.

By the way...he's no longer pushing pizza. Anyone need a 24" dia x 58" long walnut & maple peel?

Thanks everybody! To answer the questions...

- Photos of the peel in action will be forthcoming!
- Laser engraving is a great idea! Thanks Jeremy (and Happy Birthday!)
- Resawing: Yes, a lot of it. In fact, that was one of the things we did that my friend was most impressed with.
- Finish: I sent it home with my friend unfinished but gave him instructions to put three coats of mineral oil on it. I gave him a sanding pad to light sand it between coats too. He said it came out great!
- Good question Tom. I drew the 22'' circle with a scrap piece of wood that had a nail in it and a hole for a marker 11'' away. Here's a pic:



- John, it's great that you had the experience with your son. I wish my son would take an interest in woodworking! BTW, I bet you could sell that 24'' peel to a pizza place, I'll ask my friend if he's interested if you want.
