David, out of curiosity I monitored my home indoor readings yesterday as well as the outdoor temperature, dew point, and relative humidity data from the National Weather Service in Raleigh. The spreadsheet also includes your mini-split shop readings.
The weather forecast yesterday morning said that the dew points would fall throughout the day and indeed they did and it felt less humid. Overall your shop mini-split is following a similar trend so its probably performing just fine and you may not be able to fine tune it anymore than it is. Dew point temperatures below about 64 are fairly comfortable but above that it begins feeling progressively muggier and sticky.
