I built a shop 32' x 64' with 12' ceiling in a style similar to the Morton buildings but I hired local carpenters that work by the hour and I saved a LOT of money over the Morton building and everyone else I got quotes from. It is in the pole barn style covered in colored metal with concrete floors and insulated with central heat and AC in half of it. Plumbed with commode and sink and lots of receptacles and central underfloor dust collector. It is a pleasure to work in. My point is you can probably beat the big name company prices if you can find some good carpenters that work for themselves and take pride in their work.
