Very fine steel wool (with the oil removed) also may work to smooth out the feel a bit.

Mike, I really like what you are doing, it is going to be a useful and beautiful addition to your kitchen. While I am far from being an expert on spraying finishing, I have had some reasonably good results. I think you will find that a light sanding followed by an additional coat will go a long way at getting the finish and feel you are looking to achieve. Years ago, Golfdad (Dirk) shared with me a paint formula that has proven to be very effective with my spray gun (Earlex): 16 oz paint, 5-6 oz water, 2-3 oz of flow control. I use this with a 1.5mm needle, since you use a larger needle, you may not need as much dilution.

The finish is a water-borne lacquer I believe. A 1.8 or 2.0 mm tip is recommended by Emtech for spraying without dilution.
