I have a set of 1/2 inch whitesides dovetail bits that I picked up a few years back. Most of the dovetail lbs I have made previously hav used the original bits and the corresponding guide. I have never used these 1/2 inch bits but I now need to do some dovetails on some 13/16 material. If I use a guide made for a 1/2 bit, I assume it will work fine as I still need to make fine adjustments to cut the pins. Is this correct?

Should work just fine. However, there are some DT bits that are either longer or shorter than usual and will not work as expected.
If the bits you have work on scrap, regardless of thickness, they should be fine on 13/16. The jig is referencing the cuts from the inside of the drawer/box and doesn't care about the thicknesses of the materials...within reason!
For instance, I usually build drawers with 3/8" sides and fronts vary from 1/2" to 3/4".
