I've read several places that it's not advisable to finish bamboo that's used with food preparation with mineral oil. But nothing I've read says why. Is it because bamboo is porous and the mineral oil will soak in and might become rancid? If so, what's a good finish for bamboo. In this case it's a bread board, that is, it's used for preparing bread or pizza dough.
