Gluing end grain?

Last weekend my son Sandy came for a visit and some shop time. He wanted to make some cutting boards for gifts. His designs were a checker board like pattern that were made be gluing strips long grain and then cutting and regluing end grain. We used TightBond III for water resistance. I've since been wondering if we should have used another type of glue. Any thoughts on this? I need to know because SWMBO has decided that she needs some.

what I have done with chess boards is after cutting and rotating is cut a spline in the end grain. this will add enough strength and keep thing from warping to an extent. if the edges are going to be exposed you can inlay a strip around the outside as an accent and to hide the spline ends.

Titebond II or Titebond III are both good choices for cutting boards. Both are highly water resistant and are the most often used adhesive for cutting boards and butcher blocks.
