How often would you want to back up?

I don't know - maybe every couple of days? Once a week would be too long, and every 24 hrs would be too often.

How many distinct copies would you want. Where would they be saved?

I would think maybe one backup, plus a 2nd generation backup, stored on the server so we can get to the data and replace the data back into the original article - maybe just as simple as cut & paste. I think we would need at least one "WebTemplate" admin to be trained and prepared to handle these kinds of tasks.

It seems to me that what you really want is a real undo capability. But that would have to be built into the application itself.

Yea I know - "undo" is not an option. The add-on wasn't designed that way.

The issue you are describing exists for any collorabitive system that doesn't have undo built in.

Not necessarily - for example, in Wiki, you can look at the history and manually undo the changes that way. That's really all I would want to be able to do. It's just a log of who changed what, when. Maybe that would work, but I have no idea how that would be accomplished in WebTemplates.
