what's the best way to dry cookies - with a minimum of cracks? I've about a doz butt logs that are close to 36" dia. Is there an ideal thickness to cut them, initially? I can always resaw them thinner, later. And what's best way to store while curing.

Anchor seal or paint. I heard melted wax being used by never used that method. I still get some cracks with anchor seal. Slow drying in the key.
The problem is that the core drives at a different rate than the rest of the wood.
When woodturning green wood, I dry them in a paper bag full or the shavings

The Moulthrops soaked their bowls in polyethylene glycol to avoid cracking. They (or at least the elder Moulthrop) would take a section of a trunk and turn a bowl out of it. Some of them were several feet in diameter. I have also read of people soaking bowl blanks in alcohol. Since you have a bunch, you could experiment with different methods. If you check with AAW, they may have a plethora of ways to avoid cracking of blanks.
