It sounds like you're using one of the methods that Chris Schwarz teaches.
Yes, though not exactly it’s definitely Schwarz inspired.

I’m splitting and riving oak logs and shaping square legs with a #6 plane. Then they go into a cradle like Wiley described and the corners are planed into an octagon or a tapered octagon. The one handed planing is for tapering and shaping the end while rotating the board with the other hand to begin forming the tenon. lastly I use a tenon cutter to accurately cut the finished tenon. The hand work is intended to remove enough material so the tenon cutter work is minimal and to smooth the transition from octagon to tenon. And I use a #4 or #5 to clean up the finished octagon. This applies to legs, stretchers, and chair spindles.

I have a shave horse and drawknives but don’t always have access to green wood. The above process works pretty well for dried wood. And I’m using a tenon cutter so that I don’t need the precision from a spoke shave. But I’m still learning and always looking for ways to improve.
