In my ride through town I found this dogwood beside the street and as a "Turner" couldn't pass it by. Owner was glad to have me get it !! ... Are there any ideas about what to do with the crotch in this trunk turning wise??

Pepper mill?

I made a 6" pepper mill out of a piece of apple 8 years ago, that turned out very nice. It is still used on our dinner table. I would think that dogwood would be nice as well.
