Best wood for making a cutting board

All the ones I have built were Ambrosia Maple, Cherry, and Walnut. At first I made face gain boards because I did not have a drum sander. But about a year ago I got a drum sander and ever since then all have been end grain. The drum sander makes the process so much easier. The other purchase I made were the Panel Max Glue Press by Fulton. Bought this for panels and table tops but they work great for the cutting board. While not perfect it is nice to have these setup on the wall, so the footprint is tiny.

Cutting on end grain your knife spreads grain vs cross grain where your knife cuts the grain thus the knife marks. Mos all Butcher's blocks are made End grain for this reason. They last much longer not to mention are easier to keep clean.
